Introduction

This is a great salad served inside a whole-wheat pita with lettuce, salsa and a wedge of avocado. Great with tortilla scoops to serve as an appetizer. Number of Servings: 8

Ingredients

    4 tbsp lime or lemon juice or 2+2 of each
    1 tbsp olive oil
    1 tbsp chopped fresh cilantro, or to taste
    1 large clove garlic, minced
    1/2 tsp oregano
    1/2 tsp cumin
    1/8 tsp salt
    1 15-oz can black beans, drained and rinsed
    1 15-oz can corn, drained (Also try grilled/roasted corn removed from the cob or pan fry the corn first)
    1/2 cup each, diced green and red pepper
    1/4 cup diced purple onion

Directions

Mix the first seven ingredients.
Add the remaining ingredients and mix well.
Chill for one hour before serving.

Makes 8 one-half cup servings
