Ingredients

    olive oil, chopped onions, chopped celery, curry powder, sliced mushrooms, rice, broth, pease, soy sauce, and cayanne pepper make this a delicious meal!

Directions

Preheat oven to 350 degrees. In large saucepan, warm oil. Adds onions, celery, and curry powder, and saute for 1 minute. Add mushrooms and saute for 3 minutes, or just until onions are soft and mushrooms begin to release their liquid. Stir in rice nd cook for 1 minute. Stir in broth, peas, soy sauce, and red pepper and bring to a boil. Put in pan. Cover pan and bake for 40-50 minutes or until rice is tender and liquid absorbed. Let stand for 10 minutes. Makes 4 one cup servings.
