Ingredients

    2 slices whole wheat bread, stale or lightly toasted
    1/3 cup fat free yogurt
    2 egg whites
    1 T vanilla extract
    1 Pear, cored and cut into eighths
    1 cinnamon stick
    1 pat of butter (1/3" of 1 inch square)
    1 T cinnamon
    3 T sugar free maple syrup
    4 packets artificial sweetener
    Cooking spray as needed

Directions

As you toast your bread, in a wide and shallow container beat together the egg whites, vanilla, yogurt, a couple dashes of salt, and two packets of artificial sweetener.

Cut toast diagonally and squish in above mixture, flipping and coating. Leave to soak as you work your pears.

Heat a saute pan on high and put pear slices and cinnamon stick in and cover pears with water, let cook until pan runs dry. Then, in dry pan, flip, getting color and caramelization on all sides. Add water to pan again, approximately half a cup, a dash of salt, let boil, add half a pat of butter, ground cinnamon, and syrup shaking so it doesn't break. Finish with sweetner. Set aside.

Melt butter in pan that is sprayed and med-low heat. Cook toast, approximately 5 minutes per side (you may have to spray like crazy before you flip.

Tada.

Makes breakfast for two!
