Introduction

This is a recipe I photo copied out of a cookbook a while ago, I changed a few things and get asked for the recipe everytime I serve it to others. This is a recipe I photo copied out of a cookbook a while ago, I changed a few things and get asked for the recipe everytime I serve it to others.
Number of Servings: 4

Ingredients

    1.25 cups of diced carrot
    1.25 cups of diced potatoe
    .5 cup of garlic ( I cut the ends of the cloves)
    2 cups of chicken broth (can use water to make vegan)
    1 tablespoon of extra virgin olive oil
    salt and pepper to taste

Directions

add extra virgin olive oil to soup pot, turn on burner to medium-high. add carrots, potatoes and garlic and saute for a couple of minutes to sweat vegetables. add salt and pepper. add chicken broth (or water). turn heat down to medium-low. simmer vegetables until tender. turn off heat and ladle into blender and a puree till smooth. you can do in batches.
