Introduction

Ingredients

1 cup King Arthur white whole wheat flour
2 tsp. baking powder
½ tsp. salt
1 tsp. pumpkin pie spice
2 cups Kashi® GoLean® Original cereal
1 cup Almond milk, original
2 large eggs
¼ cup honey
¼ cup blackstrap molasses
2 tsp vanilla extract
½ cup unsweetened applesauce
2 medium ripe bananas, mashed
4 tbsp ground flaxseed meal
1/4 cup golden raisins
Nonstick cooking spray
Directions
Makes 12 regular sized muffins.
Directions
Preheat oven to 400° degrees.
In a small bowl, stir together flour, baking powder, salt, and pumpkin pie spice. Set aside.
In a large mixing bowl, crush Kashi® cereal, add almon milk and let stand for 2-3 minutes, allowing the cereal to get soft. Stir in honey, molasses, applesauce and banana. Add the egg and mix well. Add vanilla extract. Stir in flax seed and raisins.
Add flour mixture and mix only until dry ingredients are moistened (over-mixing will produce rubbery muffins).
Fill sprayed muffin tins. Bake for 20-25 minutes, or until lightly browned. Cool before serving.
