Ingredients

    3 cups cucumber, diced
    30 cherry tomatoes (about 2 cups), halved
    1 Green Onion stalk (cut with scissors), or about 1 cup diced onion, any type
    Basil, 30 leaves (a good handful), cut with scissors
    Parsley, 1 springs (another good handful), cut with scissors, stalk and all
    6 tsp Olive Oil (Extra Virgin if you can)
    1 tbsp Balsamic Vinegar
    salt and pepper to taste

Directions

The longer you marinate it the better it tastes. If you refrigerate leftovers, let them warm up to room temp slowly (no one wants to see hard clumps of olive oil)
