Ingredients

    * 1 1/2 lb flank steak, cut diagnonally into thin strips

    * 1/2 c low sodium soy sauce

    * 2 garlic cloves, mashed

    * 1 1/2 green peppers, thinly sliced into strips

    * 1 large onion, thinly sliced

    * 5 stalks celery, thinly sliced into strips

    * 1 large tomato, cut into thin-medium wedges

    * 1 TBSP cornstarch

    * 1 c water, divided


    I serve over hot, cooked brown rice.

Directions

Makes 6 large servings


1. Mix marinade ingredients: soy sauce, garlic cloves, and 1/2 c water.


2. Cut steak on the diagonal across flank in thin strips.


3. Marinate meat in above mixture for at least 15 minutes. Reserve liquid.


4. While meat is marinating, use wok or large, wide skillet to heat oil until very hot. Brown meat in oil quickly (2-5 minutes). Push meat to side of pan.


5. Add vegetables. Cook 2-4 minutes until tender-crisp.


6. Mix reserved marinade liquid with cornstarch and the other 1/2 c water. Stir into wok/skillet and cook until thickened.


7. Serve over hot, cooked rice.
