Introduction
Using a good quality tomato sauce makes this a super quick dish - easy for midweek supper but stylish enough for dinner with friends. I've use cod in this dish, but you could use any fish or seafood you prefer. Serve with rice, couscous or flat breads. Ingredients

350ml Fresh tomato sauce
1tsp harissa paste (add more if you like it spicy!)
2tbsp chopped coriander (cilantro)
750g white fish fillets, cut into chunks
Salt
Pepper
Directions
Serves 4
Heat the tomato sauce with the harissa and coriander in a large pan. Add seasoning to taste and bring to the boil.
Remove the pan from the heat and add the fish to the hot sauce. Return to the heat and bring the sauce to the boil again. Reduce the heat and simmer very gently for about 5 minutes, or until the fish is tender. (Test with a fork: if the flesh flakes easily, then it is cooked.)
Taste the sauce and adjust the seasoning, adding more harissa if necessary. Serve hot or warm.
