Number of Servings: 8

Ingredients

    1 pound Beef Stew Meat
    1 Cup Salsa-I like bean and corn salsa
    1 Chipotle pepper in adobe sauce
    8 Tia Rosa Tortillas
    1 cup beef broth or water

Directions

1. Lightly cook steak meat on both sides (optional)

2. Mix with 1 cup salsa, 1 cup water (or beef broth) and 1 chipotle pepper cut up. (2 peppers if you like it hot! You must add water or beef broth or the meat will end up being dry and will overcook).

3. Put into crockpot and cook on high 4-5 hours, or on low 6-8 hours. You can shred the meat before adding to tacos.

4. One serving is equal to 1/4 cup taco meat in one soft taco.

Makes 8 soft tacos.
