Introduction
This is a great way to use some of that extra zucchini in a different way. This is a great way to use some of that extra zucchini in a different way.Number of Servings: 2
Ingredients

2 cups shredded zucchini - well drained
1/2 cup Italian bread crumbs
1 T light Mayo
1 T Old Bay Seasoning
1 Egg
Cooking Spray
Directions
Mix all the ingredients together. (the original recipe called for 1 cup bread crumbs, I tried 1/2 and it was fine- I would also try the carb concious - but didn't have any).
Form into approx. 6 (3 inch diameter) patties/cakes.
Spray telfon pan with cooking spray.
Cook 3-4 patties at a time on medium-low heat, flip after about 5 minutes - when the bottom has begun to brown and the patties/cakes begin to firm up.
Cook the other side until brown and they begin to dry, unless you like them very moist - its a matter of taste.
The original recipe also called for salt and pepper to taste. Personally, I think between the seasoned bread crumbs and the Old Bay, they are seasoned enough.
