Introduction

Warm garlic broth - great when you have a cold, or a vegetarian option for soup stock! Warm garlic broth - great when you have a cold, or a vegetarian option for soup stock!

Ingredients

    2 heads of garlic
    64 oz water
    Boquet Garni (bay leaf, thyme sprig, rosemary sprig, sage leaf all tied together)

    Small pan of boiling water
    Small bowl of ice water

Directions

Bring a small pan of water to a boil. Break up the heads of garlic into cloves and blanch them in the boiling water for 30 seconds, then transfer to the ice water. Take the cloves out of the ice water, slip off the skins, and smash with the flat of a knife. (The more you smash them, the stronger the garlic flavor!)

Place cloves into a large sauce pan, add the water and the boquet garni, and bring to a gentle boil.

Reduce heat, cover, and simmer for an hour. Serve or freeze afterward!
