Ingredients

    2 cups cooked lentils
    1 cup cooked pearl barley
    2 cups canned diced tomatoes
    1.5 cups (1 large) sweet onion
    6 cups chicken or vegetable broth
    1 tbsp. curry powder

Directions

Put all the ingredients into a large pot and bring to a simmer. Cook until the onions are tender, about 20 minutes. This soup can also be made with dry lentils and barley. I use 1 cup dry lentils and 1/2 cup uncooked barley. Add an extra 2 cups chicken broth and cook for 45 minutes instead of 20. For a vegetarian or vegan dish, use vegetable broth instead of chicken broth.
