2 lbs. chuck roast
2 large potatoes
3-4 large carrots
4 cups low-sodium beef broth
Directions
Trim the fat from the chuck roast
Slice potatoes and carrots
Slice potatoes and carrots
Add beef, potatoes, and carrots to a crock pot, and mix well together. If there is not enough broth to cover all the ingredients, you can add a little water.
Allow pot roast to cook for 8-10 hours on a low setting. Once the roast is cooked, add 1/3 cup of flour to the pot and stir.
