Introduction

Ingredients

    4 large potatoes, peeled and sliced into rounds 1/4 inch thick

    1 pound boneless, skinless chicken breasts. Pound to 1/2 inch thick and then freeze before using. Or use frozen chicken breasts from the store.

    1/2 medium onion, sliced to 1/4 inch thick and the separated into rings

    4 large carrots, peeled and sliced on the bias into 1/4 inch thick pieces

    1 large celery stalk, sliced into 1/4 inch thick pieces

    1 Tablespoon minced garlic
    2 Tablespoons parkay squeeze margarine
    1/2 to 1 teaspoon lemon pepper

Directions

Preheat oven to 400 degrees Farenheit.

In a regular cake pan, (sprayed with pam if it is not a NONSTICK pan), layer potatoes, celery, carrots, potatoes, celery and carrots... until all are used. On top of those, dribble garlic and layer onion rings.

Place chicken on top of the vegetables.

Drizzle with Parkay.

Sprinkle on lemon pepper.

Cover tightly with foil. Place in oven. Turn temperature down to 350 degrees. Set timer for 1 hour 30 minutes. Check when timer rings. Chicken should be cooked through and vegetables tender. If not, cook for 15 more minutes and check again. Repeat if needed.

Serves 8-10 people. Is very good with melon and a green salad.
