Ingredients

    4 slices of toasted lite white bread cut into cubes
    4 oz of reduced fat shredded cheddar
    4 oz of sliced Canadian bacon cut into 1/2 inch squares (divided)
    2 cups of skim milk
    2 eggs
    1 cup of egg substitute
    1/2 tsp salt
    1/4 tsp pepper

Directions

Preheat oven to 350. Spray butter flavored nonstick cooking spray on a 8x8x2 baking pan. Spread bread in the bottom the pan sprinkle with 2 1/2 oz of cheese. In a mixing bowl mix eggs, milk, 2 oz bacon salt and pepper. Pour mixture over bread and cheese, sprinkle with remaining bacon. Bake for 40 minutes remove and sprinkle with remaining cheese, bake for another 5 minutes or until toothpick comes out clean! Makes 4 servings!! ENOY!!!
