*KROGER Kidney Beans, 1.75 cup (remove)
*1 can diced tomatoes, 3.5 serving (remove)
Oregano, ground, 1 tbsp (remove)
Basil, 2 tbsp (remove)
Thyme, ground, 1 tbsp (remove)
Sage, ground, 1 tbsp (remove)
Rosemary, 1 tbsp (remove)
Bay Leaf, 1 tbsp, crumbled (remove)
*Summer Squash, 1 medium (remove)
Zucchini, 2 cup, sliced (remove)
Chickpeas (garbanzo beans), 1.75 cup (remove)
Directions
Makes 4 Servings. (4 big bowls!)
Combine chicken broth, drained beans, seasonings, and undrained tomatoes in a large pot. Stir and bring to a boil. One boiling, add in chopped vegetables and spinach. Stir and cover. Simmer for 10 - 20 minutes, depending on preferred texture of vegetables. I like mine a little soggy so that the flavors can soak in, so I'm more of a 20 minute person.
