Number of Servings: 4


    2 Cans Chicken Broth
    1 Carrot
    2 Stalks Celery
    1/4 Onion
    1 Cup Pumpkin
    1/2 Cup Half and Half
    1/2 Cup Unsweetened Applesauce
    11 oz Corn
    Salt and Pepper to taste, I also added some Trader Joe's 21 Salute non-salt seasoning
    Nutmeg and Cinnamon


Cut up the carrots, celery and onion (relatively small)
Simmer the veggies and corn with the chicken broth for 25 min (or until soft)
Stir in pumpkin and applesauce, simmer for 15 min
Turn off heat and add half and half and seasonings.
Add a dash of nutmeg and cinnamon for a little spice


You can modify this however you would like- seasoning wise!

Makes 4 main portion sizes, or 6 sides.

    ack, tried to give 5 stars and misclicked! Great, easy recipe - I love it! I swapped out the half & half with soy creamer to make it vegan, and added a dash of paprika and cayenne for a little kick, and it absolutely hit the spot. Thank you! - 10/5/10
