Introduction

Ingredients

    1 C old-fashioned oats
    1 3/4 C almond milk (plain, unsweetened)
    1/8 t salt
    3 t brown sugar (loose) or honey
    1 T flax seed meal
    1 T coconut flakes
    1/4 C chopped almonds

Directions

Bring almond milk and salt to a gentle boil stirring to prevent scorching. Add oats and boil over medium heat for 5 minutes. Remove from heat. Stir in brown sugar, flax seed meal, coconut and almonds. Serve piping hot.

This makes 2 servings (but it makes enough to serve 1 adult and 2 kids).

    Tastes Great - I also do a variation with almond flour (instead of chopped nuts), blackstrap molasses (instead of sugar or honey) and lots of butter - seasoned with ginger, cinnamon, turmeric, and garlic. Yummy, and choc full of anti-oxidents! - 1/11/14

    Very Good
    I am always looking for ways to use coconut, and spice up the traditional Oatmeal. So, I tried this & it was yummy! I had to substitute FF milk, since I didn't have any almond milk. - 6/21/11
