Introduction

A light carb alternative to pasta, potatoes, or rice! A light carb alternative to pasta, potatoes, or rice!
Number of Servings: 7

Ingredients

    6 large parsnips
    2 tbsp olive oil
    3 tbsp honey (good quality - not that fructose syrup stuff)
    2 tsp thyme
    Salt and pepper to taste... about a tsp or less of each
    1-2 tsp rosemary (optional)

Directions

1. Peel parsnips and cut in half across, then into wedges. (Think potato wedge-style) Try to keep the wedges no thicker than about 1 to 1.5 cm.

2. If using fresh thyme and rosemary, crush together in bowl.

3. Add oil and honey to bowl and mix. (Honey and oil will not completely mix, but this will be okay.)

4. Place parsnips in a single layer in baking tray and pour oil/honey/herb mixture over. Toss together until coated.

5. Roast in oven for 25 minutes at 400 F or until lightly browned. Turn at the 12 minute mark.

Additional note: This produces a browned, but still somewhat soft parsnip wedge. If you like them crispier, just bake a little longer (but remember to check frequently if you do! Parsnips can go from perfect to burned rather quickly - especially when coated with honey.)

Makes 7 servings, dependent on how generous (or hungry) you and your dinner party are. :-P
