Introduction

Very simple, flexible, high-fibre vegetarian/vegan soup recipe that tastes great on a cool, fall day! Very simple, flexible, high-fibre vegetarian/vegan soup recipe that tastes great on a cool, fall day!
Number of Servings: 10

Ingredients

    6 cups Water/Vegetable Broth
    2 cups Yellow Split Peas
    3 medium Carrots, diced
    3 medium Potatoes, diced
    3 stalks Celery, diced
    1 large Onion, diced
    5 cloves Garlic, minced
    Salt and Pepper to taste

    Spices: I used Thyme, Dill Weed and Chili Powder, which tasted great!

Directions

Place all ingredients in a large pot. Bring to a boil. Simmer for two hours. Let sit and, once cool, puree soup until desired consistency. Heat, serve and enjoy :)
