Introduction
Variation of Salsa Verde Chicken, but healthier! My husband added light sour cream and cheese to his and ate over rice, I topped mine with fresh cilantro and chopped fresh tomato! Ingredients

1 lb. boneless, skinless chicken breasts, cubed
1 medium onion, chopped
1/2 - 1 green pepper, chopped
3 cloves of garlic, sliced thinly
3/4 cup (or more to taste) of La Victoria Green Taco Sauce
1/4 cup water
Spices (red pepper flakes, cumin, Mrs. Dash Chipotle)
Cooking Spray
Directions
Heat large skillet to med-high heat. Spray with cooking spray then add onions, peppers, and garlic. Saute 2-3 minutes, then add 2T water and continue to cook until tender and water has evaporated. Remove from pan, heat pan to high.
Spray pan with cooking spray, and add cubed chicken. Sprinkle desired seasonings over chicken and saute over high heat until outsides are white. Reduce heat to medium, add taco sauce. Stir well, allow to took 2 minutes. Add remaining water, cook 5-10 minutes or until chicken is cooked through. Thin with more water if needed.
Top with light sour cream, low fat cheese, fresh tomato, chopped cilantro, or whatever sounds tasty (not included in nutrition info). Serve over rice, as a taco filling, or by itself!
