Introduction

This is a simplified version of a French-style potato salad. You can play around with the dressing to make it a little tangier by adding more vinegar. Try out different spices! Ingredients

    1 1/2 Lb. Yukon Gold Potatoes
    4 T. Red Wine Vinegar
    2 T. Extra Virgin Olive Oil
    2 shallots or 1/2 Small Onion, finely diced
    1 T Dijon Mustard
    1/2 t. Dried Thyme
    1/2 t. Dried Parsley
    Salt and Pepper to Taste

Directions

Wash potatoes and half or quarter them depending on size. Boil for approximately 20 min. or until tender.

Dice onion and mix dressing while potatoes are cooking.

Pour dressing over warm potatoes, tossing gently until potatoes are well-coated.

Serve warm or let cool. Refrigerate leftovers.

    Incredible!
    thought it would be wierd because of the sauce on the hot potatoes, but that actually made the texture really creamy and nice. i tweeked it a bit with less oil and pickle juice instead of vinegar, but it would have been great regardless. Thanks for this recipe!! it will be one of my "go-to" foods! - 6/1/11
