Number of Servings: 6

Ingredients

    8 eggs
    2 egg whites
    1 bag frozen or fresh spinach
    1 onion chopped
    1 1/2 cup of sliced white mushrooms
    1 cup of Feta Cheese
    1 cup cherry tomatoes sliced in half
    2 tbs olive oil
    salt and pepper to taste


Directions

take 1 teaspoon of olive oil and oil the pie/quiche plate. Take the other tbsp of oil and put in frying pan. Saute frozen or fresh spinach with mushrooms, onion, s&p, lightly. In the meantime whisk the 8 eggs and 2 eggs whites. add the sauted vegtables to the egg mixture, stir, add feta, stir, Cut cherry tomatoes, either place in mixture or have on side. I prefer them on the side, my family likes them in the quiche. Pour into quiche dish, Cook for 40-45 minutes at 350 degrees (until middle is firm). Can be served with salad, or topped with salsa for a kick!!
