Introduction

This version of hummus is lower in fat and cholesterol and store bought, but just as delicious! Based on a recipe from Eating for Lower Cholesterol. Ingredients

    head of garlic, skins left on
    one can 15 oz chickpeas, rinsed and drained
    1 tsp ground cumin
    2 Tbs lemon juice
    1 Tbs canola oil
    1 Tbs tahini
    1/4 C water (add more or less for the desired consistency)
    1 tsp salt


Directions

To roast the garlic, preheat the oven to 425' F. Cut the top off the garlic and wrap in foil and bake for about 30 minutes, or until the inside of the garlic is soft and oozing.

In a food processor, add everything but the water. Turn it on and feed the water through the top until the desired consistency. Add more salt, hot sauce or cumin to taste.
