Ingredients

.5 oz Hard Romano Cheese finely grated
ready made plain polenta in tube
Meyer Lemon Olive Oil
1/8 cup Progresso Bread Crumbs - Italian Style
1/8 cup Almond Milk
Directions
This recipe makes 5 or 6 servings
Slice tube of polenta into 10-15 slices of your preferred thickness. I tend to slice it into 5 pieces and then slice each of those into 3 rounds each.
Mix cheese and bread crumbs in a small bowl
Pour a small amount of almond milk in a small bowl (enough to cover the bottom of the bowl)
Heat a large skillet on high
Dip the polenta rounds first in the almond milk, and then in the cheesy bread crumbs
cover the bottom of the pan with lemon olive oil (the lemon is important, it adds acid to the recipe so if you don't have lemon olive oil grate lemon rind finely and mix into light extra virgin olive oil and let soak) Place polenta rounds carefully into hot pan (the oil tends to spit)
Cook till browned on each side, and serve
