Introduction

Delicious crab cakes! Delicious crab cakes!
Number of Servings: 8

Ingredients

    Lump crab meat, 1 lb. (I prefer Dungeness, but anything will do)
    Milk, 1 cup
    Tabasco, 5 drops (I use Red Devil sauce)
    Parsley flakes, 1/2 teaspoon
    Salt and Pepper to taste
    Crushed Ritz crackers, 30 count
    Whole wheat flour, 1 tablespoon
    Yellow mustard, 1 teaspoon
    Bread, 2 slices
    Crushed red pepper, 1/4 teaspoon
    Canola Oil

Directions

In saucepan, mix together flour and milk. Cook over medium heat until thickened; let cool. Add Tabasco sauce and mustard. Pick over crab meat; add bread crumbs, parsley, salt, pepper, and crushed red pepper. Add cooled sauce; mix thoroughly. Shape into cakes. Roll in cracker crumbs and fry until brown.

This is excellent when paired with a New Orleans rémoulade!
