Ingredients

    1- 8 oz can Water Chestnuts
    1 -8 oz can Bamboo Shoots
    1 c Cascadian Farms Organic (frozen) Garden Peas
    2 tbs olive oil
    2 containers Minute Ready to Serve Brown and Wild Rice
    4 large scallions (chopped)
    2 large carrots chopped (I slice into medallions)
    1/3 pkge fresh broccoli florets
    Garlic Powder and Ground Ginger to Taste

Directions

Heat 2 tbs of extra virgin olive oil in a deep skillet. Add chopped scallions and saute until softened. Add carrots, peas, broccolli florets, bamboo shoots, and water chestnuts stirring after each addtion.sprinkle mixture with garlic powder and ground ginger. Cook until carrots are softened. Meanwhile, microwave rice according to package directions. Add to skillet and stir. In a separate frying pan, scrambled 2 eggs. Add to the skillet and stir into mixture. Enjoy! You can serve with duck sauce, hot mustard, or whatever you like to use to top your Chinese food. I prefer mustard and will even use dijon when the hot Chinese mustard isn't available. Makes 4 - 1 cup servings or 8- 1/2 cup servings.
