Introduction

Ingredients

    1 tsp olive oil
    1/4 c onion
    1/4 c green bell peppers
    1 large tomato seeded
    5 oz package fresh spinach
    1 c egg whites
    3/4 c egg beaters
    1 tsp garlic powder
    2 eggs
    1/4 c Bisquick
    1 c light mozzarella cheese shredded
    salt and pepper to taste

Directions

add olive oil to pan, sauté green peppers and onions, garlic powder until tender, add seeded and diced tomato, and spinach, cook together until spinach has wilted, spray a casserole dish with cooking spray, layer vegetable mixture in the bottom, mix all eggs together and add Bisquick and cheese, pour over vegetable mixture. Bake at 350 degrees or until middle is done.
