Introduction

Of course I don't eat all of this at once! I make it, throw it in an airtight container, and eat on it for lunch a few days at work. Is also yummy in a corn tortilla! Ingredients

    Chickpeas
    Pickled beets
    Beans, black
    Avocados
    Red Ripe Tomatoes, 1 cup, chopped
    Red Onions
    Peanuts, dry-roasted (or chili peanuts)
    Cilantro

Directions

Chop what's needed, mix it all together. Great right away but even better after resting all night!
