    2 cups cooked, chopped, ham
    12 oz. Egg Noodles
    1/2 c. chopped onion
    1/2 c. chopped carrot
    vegetable spray
    2 tbsp. fat free sour cream
    1 can Cream of Chicken Soup
    3/4 c. shredded mozzarella cheese


Boil water for egg noodles. Meanwhile, spray small sauce pan with vegetable spray. Add onions and carrots. Cook approximately 10 minutes, till carrots begin to become tender. Add sour cream and soup. Blend.

In a casserole dish, layer 1/3 of cooked noodles, 1/3 of ham, 1/2 of onion/carrot/soup mixture, and 1/3 of shredded cheese. Repeat. Finish with final 1/3 of noodles, ham, and cheese.

Bake in 350* oven for approximately 40 minutes, or until heated through.

Makes 6 servings - approx. 1 1/2 c. per serving.

Can also be made with peppers in place of carrots or with cheddar in place of the mozzarella.

    Liked it - but I added 2 zuchinis chopped and 1 cup of carrots, plus for a kick, 1 tbsp of Jalepano flakes. Will make it again with leftover ham - 4/7/09
