Introduction

Ingredients

    Old Fashioned Quaker Oatmeal- Plain 1/2 cup dry
    *Whole Wheat Flour, 1/2 cup
    Uncle Sam cereal, 1/4 cup
    Oat Bran, 1/4 cup
    Ground Flaxseed, 1 tbsp
    Brown Sugar, 2 Tbsp, packed
    *Splenda, 12 tsp
    Baking Powder, 1/2 tsp
    Cinnamon, ground, 1/2 ts
    Salt, 1/8 tsp

    Egg White substitute, 1/4 cup
    Banana, fresh, 1/2 small (6" to 6-7/8" long)
    Carrot Puree 1/4 cup (sm. jar of baby food)

    Raisins, 2 Tbsp, packed
    Cranberries, dried, sweetened (craisins), 2 Tbsp
    Vanilla Extract, 1 tsp

Directions

Combine Dry ingredients (1st 10 ingredients), mix well and set aside.

In seperate bowl, mix wet ingredients well (babyfood , egg white substitute and banana)

Add wet ingredients to dry ingredents...stir until completely blended.

Chop raisins and craisins to small pieces. sprinke into batter, making sure they do not clump together.

Spray baking sheet with non-stick spray. Spoon into 4 cookies.

Bake in a pre-heated 375 degree oven 10-12 minutes.
Remove from the oven and allow to cool slightly before removing to cooling rack.

Makes 4 cookies
