Ingredients

    Carrot Cake Recipe

    2 cups of sugar
    1 1/2 cups of canola oil
    4 large eggs
    2 cups of plain flour
    2 tsp of baking soda
    2 tsp of cinnamon
    1 tsp salt
    3 cups of grated carrots
    1/2 cups of grated pecans
    1/2 cup shredded coconut
    1/2 cup raisins

    1 3 1/2 oz box of pumkin pie instand pudding mix
    2 cups of milk
    1 small carton of kool whip (light or regular)

Directions

in a bowl measure 2 cups of flour, 2 cups of sugar, 2 tsp baking soda, 2 tsp cinnamon and 1 tsp salt. Grate the carrots and pecans. In the mixing bowl add the 4 eggs, canola oil, grated carrots and the pecan mix well add the flour/sugar/spice mixture and mix until blended well.

cook cake at 350 degrees in a 13 x 9 inch pan for 30 to 35 minutes. Cool cake and cut into cubes.

Mix the pudding according to package

in a pretty glass bowl layer the cake, pudding, coconut, raisins and koolwhip, in that order top with a sprinkly of coconut and raisins. 10 servings.
