Introduction
I made a few changes to recipe submitted by ARFICAPARISH by adding the whole ground flax seed meal, slithered almonds and substituting the orange juice concentrate. I made a double recipe, dividing the batch between 3 foil pans. Ingredients

2 cups 'White Whole Wheat Flour'
1/2 cup Quaker Old Fashioned Oatmeal
1/2 cup whole ground flaxseed meal
2 Tbsp Splenda sugar substitute for baking
1 Tsp baking powder
1/2 Tsp baking soda
3/4 cup fat-tree milk, unsweetened almond or soy milk
3/4 cup egg substitute or 3 whole eggs
1/3 cup orange juice concentrate
1/4 cup unsweetened applesauce
1 Tbsp orange zest
3/4 cup dried cranberries
Directions
Preheat oven to 350 degrees F,Make a double recipe Use cooking spray on 3 : 8" X 3 3/4 " X 2 1/4" foil bread pans.Soften cranberries in two cups hot water. In large bowl, combine flour, oats, flaxseed meal, Splenda, baking powder, baking soda and salt: mix well. In medium bowl, combine milk, egg substitute, orange concentrate, and orange zest, Beat with wire whip. Add dry ingredients all at once; stir until dry ingredients are moistened. Drain cranberries add along with almonds to mixture and stir in. Divide mixture evenly into the 3 foil pans. Bake 45 or 50 minutes or until wooden pick inserted in center comes oujt clean. Cool in pan on wire rack. 10 minutes.Remove Remove from pan. Cool completely. Store in air tight containers. Enjoy, Yum, Yum.
