Ingredients



    * *Anaheim Chili Pepper, 1 cup (remove)
    * Chicken Broth, 1.5 cup (8 fl oz) (remove)
    * *Potato, raw, 3 small (1-3/4" to 2-1/2" dia.) (remove)
    * *chipotle green tomatillo, 4 oz (remove)
    * Sour Cream, 4 tbsp (remove)
    * Yellow Sweet Corn, Canned, 1 can (12 oz) yields (remove)
    * *Creamed Corn, 1.5 cup (remove)
    * Onions, raw, 1 cup, chopped (remove)
    * Cilantro, raw, 4 tbsp (remove)

Directions

Makes 6- 1 cup servings

Roast peppers, onions, and tomatillos. Remove skins from peppers and blend together. Meanwhil, boil potatoes in chicken broth. Combine chili mixture and both cans of corn into sauce pan with potatoes. Add sour cream and cilantro and serve.
