Ingredients

    Lean Ground Meat
    La Tortilla Factory - Low Carb
    Small Can Green Chilis
    1 cup light sour cream
    1 chicken boullion
    1/2 cup salsa
    1/2 cup cheddar cheese
    1 Tbs flour
    1 Tbs butter

Directions

Brown ground meat. While browing meat start the sour cream sauce. In a saucepan melt the TBS of butter then remove from heat and add flour, mix the flour and butter until thick. Put sauce pan back on the heat and add 1 cup sour cream, 1 chicken bouillon cube and the small can of green chilis. Stir until sauce becomes thick.

Stuff your enchilada's. WIth tortilla open in your palm add one large spoon full of beef, one small spoon full of salsa and sprinkle a little cheddar on top. Roll the tortilla and place in baking dish. Repeat 7 more times. Pour the sauce over the enchiladas and sprinkle with remaining cheese. Heat in microwave 5-7 minutes or in oven until cheese is melted.
