Introduction

Absolutely delicious and satisfying spinach omelet that will keep you full and energetic long into your day. It also provides many of the nutrients your body needs, while tasting great and without making you feel deprived of anything! Plus it usually turns out super pretty. Absolutely delicious and satisfying spinach omelet that will keep you full and energetic long into your day. Ingredients

    3 large eggs
    1 splash of milk
    2 oz mozzarella cheese
    1 slice extra lean ham (cut into small pieces)
    1 package frozen spinach
    2 cloves of garlic
    salt and pepper to taste

Directions

Put frozen spinach in microwave safe container and heat 4-5 minutes on high.
While spinach is heating, whisk 3 eggs with splash of milk (and salt and pepper to taste) and pour into a large frying pan sprayed with Pam (or any cooking spray)
When spinach is done, squeeze out excess water and add the ham, mozzarella cheese, and crush (or mince) the garlic into it. Mix well and place back into microwave for 1 minute.
Distribute mixture evenly onto one half of the omelet and fold in half.
Let cook for another 30 seconds or so and dig in.
