Ingredients

    1/2 c oil and 2 eggs
    1/2 c splenda
    1 c brown sugar
    2 c canned pumpkin
    3 c whole wheat flour
    2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    2 tsp cinnamon
    1/2 tsp nutmeg
    1 tsp ginger
    1 c raisins

Directions

Cream oil and eggs, sugars and pumpkin. Add dry ingredients. Mix well. Stir in raisins. Drop from spoon onto non-stick baking sheet. Bake at 350 for 10-12 minutes. Makes 48 large.
