Ingredients

3 c. sugar
1 c. vegetable oil
3 eggs
1 (16oz) can solid pack pumpkin
3 c. all urpose flour
1 tsp. ginger
1 tsp. cinnamon
1 tsp. allspice
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
Directions
Preheat oven to 350 F.
Butter and flour 2 9x5x3 inch loaf pans.
Combine flour, spices, soda, salt, and baking powder in a medium bowl.
Beat sugar and oil in a large bowl. Mix in eggs and pumpkin. Add dry ingredients to pumpkin mixture.
Divide batter equally between the 2 loaf pans. Bake until knife inserted into center comes out clean - approximately 1 hour and 10 minutes, though times may vary slightly with your oven.
Cool in pans for 10 minutes, then with a sharp knife, cut around the edges of the loaves and turn out onto cooling racks and cool completely.
Makes 2 loaves, approximately 16 slices per loaf for 32 servings in the recipe. Good to take to family gatherings, or to make and freeze 1 loaf for later consumption.
