Ingredients

1 1/2 cups long grain white rice - I use Basmati
3 1/4 cups diced unsalted canned tomatoes with juice
1 medium chopped onion
1 1/2 teaspoons medium red chile powder
1 large chopped green bell pepper
1 1/4 lbs 93% lean ground beef
4 tablespoons extra virgin olive oil
1 teaspoon salt or salt substitute (optional)
6 cups water
Directions
Makes 11 1 cup servings.
Wash the rice and drain in a large strainer.
Brown the hamburger meat in a non stick pan, drain, and set aside.
Chop the onions and bell pepper and put in same container as the browned hamburger.
Put the olive oil in a large non stick pan and saute the rice, until the rice just begins to turn golden or light brown. Stir often to avoid burning the rice.
Add the meat, onions, bell peppers, tomatoes, chile powder, salt if desired, and the six cups of water.
Bring to a boil, reduce heat, and simmer for 30 minutes.
