Ingredients

1 1/2 lbs fresh asparagus
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 tsp salt
2/4 tsp pepper
1 cup milk (I use skim)
4 hard boiled eggs diced
1 jar (2 ounces) diced pimientos, drained (I omitted)
1 cup (4ounces) monterey jack cheese
Dry bread Crumbs
Directions
cook asparagus in boiling water till tender, drain set aside.
In a small saucepan, melt butter, add flour, salt and pepper cook and stir until smoothe and bubly. Gradually add milk, cook and stir until thickened (Skim milk doesn't thicken good so don't worry) remove from heat. Place half of the asparagus in a greased 1 1/2 qt baking dish. Top with half of the white sauce, eggs, pimientos and chees. Repeat layers. Sprinkle with bread crumbs. Bake uncovered at 325 for 30-35 mintes. serving size is 4 oz
