Number of Servings: 4

Ingredients

    * 2 chicken breasts

    * 1\4 cup bread crumbs (plain)

    * 1 egg

    * 1\4 cup oil for frying (I use canola or olive oil)

    *** Seasonings to taste*** I used garlic powder, oregano & parmesan garlic seasoning.

Directions

* Start by beating egg in a shallow bowl (set aside)

* pour breadcrumbs & seasonings into a second bowl (or a baking dish or plate) - set aside

* cut chicken breasts lengthwise in half then cut each half into strips (should yield 4 strips per half)

* Pour oil into frying pan and heat on medium to allow it to heat up

* Dip chicken strips into egg, coating fully

* Now dip into breadcrumb mixture, use a spoon to ensure even coating

* Drop in heated oil

* Cook until bottom side is crispy brown, then flip

*Continue cooking until meat thermometer reads 170F

* Remove from pan to Paper Towel lined plate to drain excess oil off

Repeat steps until all strips are cooked

Serving size: 1\2 chicken breast, approx 4 strips.

*** Serving Suggestion: Serve with a side of spaghetti sauce or ranch for dipping.
