Introduction

Ingredients

    4-8 leaves of collards (giant)
    2 cups dry black beans (or whatever kind you like) soaked overnight
    1pckg of bowtie pasta (16oz)
    Tomato sauce

Directions

Makes 12 lasagna pieces. Use a rectangular casserole dish.

Layer as you would with any other lasagna, however use the giant collard leaves as you would normally use lasagna noodles. Top leaves with 1/2 pasta, 1/2 beans, 1/2 tomatoes, then repeat. End with sauce.

Bake for 40 min at 375, add cheese, and back for remaining 20 or until cheese turns golden.
