Ingredients

    1 TBS olive oil
    1/4 c. diced onion
    1/3 c. diced yellow or green bell pepper
    100 g (1 to 1.5 c.) fresh mushrooms, finely diced
    1/2 c. ketcup
    1 - 2 tsp prepared yellow mustard
    1/4 to 1/3 c. water
    2 TBS chili powder
    1 tsp garlic powder
    1 TBS cider vinegar (or any vinegar)
    2 TBS (not packed) brown sugar
    salt & pepper to taste

Directions

Makes 4 servings

1. Thaw and crumble the veggie burger and set aside.
2. Toss the diced vegetables together with the olive oil. Sautee in a medium to large skillet over medium to medium high heat until the onions begin to turn translucent.
4. Add the crumbled veggie burger and sautee 3 more minutes.
5. Add all remaining ingredients. Reduce heat to low/simmer, cover with a lid. Simmer 5-10 minutes or more. Serve on your favorite bun.
