Introduction

This recipe creates a traditional South African tart (milk pie). It bakes very quickly in the microwave oven and is not overly sweet. The pie has a custard-like texture, but a very unique taste. It is lower in calories than any melktert I was able to find on the site (considering that I get 8 very large slices, or 28 small tarts from mine - my slices could probably be halved). Ingredients

    one 397 g can of sweetened condensed milk
    600 mL (2 1/8 cups) boiled water
    15 mL (1 Tbsp) Butter
    100 mL (± ½ cups) Corn flour
    50 mL (1/4 cup) cold water
    2 Eggs separated (I use extra large)
    5 mL (1 tsp) Vanilla essence
    pinch of salt
    Little bit of ground cinnamon to sprinkle over top
    28 tart shells (calculation used) or 1 large graham cracker pie shell.

Directions

Cook the condensed milk, boiled water and butter together for 2 minutes.
Prepare the corn flour with cold water by slowly adding the water to the corn flour and stirring to prevent clumps from forming.
Add the egg yolks, vanilla and salt and mix together.
Pour this mixture slowly into the condensed milk mixture while stirring.
Cook in the microwave oven for 1 – 2 minutes at a time, stirring in between to prevent clumping from occurring, until the mixture becomes thick.
Beat the egg whites until they form peaks and fold them into the thick cooked mixture. Don't stir them in, because they are the rising ingredient.
Pour the entire mixture into the bought pie crust or tart shells.
Chill well in fridge.
Prior to serving, sprinkle the top with a thin layer of cinnamon.

    This is a good recipe! I love milk tart but I really felt like I was cheating when eating this ;) That is how good it is! My son loved it and says he misses home (SA) when I make these kind of things. - 7/24/13
