Introduction

I was experiementing in the kitchen, trying to come up with a healthier option than most quick breads for a breakfast option for my 4 year old son. I came up with this delicious, moist and (relatively) healthy pumpkin bread. It's filling and not too sweet. Ingredients

    1 (15 ounce) can pumpkin puree
    4 eggs
    1/2 cup vegetable oil
    3/4 cup unsweetened applesauce
    1/2 cup water
    1 3/4 cups white sugar
    1/2 cup packed brown sugar
    2 cups all-purpose flour
    1 1/2 cups whole wheat flour
    6 tbsp. ground flax seeds
    2 1/2 teaspoons baking soda
    1 teaspoon salt
    1 teaspoon ground cinnamon
    1 teaspoon ground nutmeg
    1/2 teaspoon ground cloves
    1/4 teaspoon ground ginger

Directions

Pre-heat oven to 325 degrees F. Spray bottom and halfway up the sides of three 7" x 3" loaf pans.

In a large bowl, stir together the whole wheat flour, white flour, ground flax seeds, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.

In a separate bowl, mix together pumpkin puree, eggs, oil, applesauce, water, and sugars until well blended.

Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.

Bake for 55-60 minutes in the pre-heated oven. Loaves are done when toothpick inserted in center comes out clean.

Makes 3 loaves or 30 3/4" slices.
