Introduction

Ingredients

1 cucumber
1 tomato or a handfull of cherry tomatoes
1/4 of an onion
handful of fresh basil
two sprigs of fresh rosemary
salt and pepper to taste
optional: trade out the rosemary or add other fresh herbs like thyme, savoury, sage and oregano. Use fresh for better taste, though dried will do. Perfect recipe for summer!
Directions
Since I always made this using one cucumber, please feel free to double, triple, etc the recipe. This is only an approximation, I used simply balsamic vinegar and a very little olive oil as a dressing, to my taste (I like to have a lot of juice in there!)
Chop the cucumbers with the peel on, and I prefer it chunky (in defiance of my mom's thinly sliced semi-sweet cucumber salad that I really really hate! lol) but cut it however you like. Add all the seasonings to taste, I really enjoy the taste of basil and rosemary and tend to make it a bit stronger than most people may like.
