Ingredients

    1.5 cups regular long grain rice
    1/2 cup chopped onion
    3 garlic cloves, minced
    2 tbsp. bacon grease (veg. oil can be substituted)
    2 3/4 cups chicken broth, heated
    1/3 cup PACE picante sauce
    1 small carrot, peeled and finely diced (optional)

Directions

In large sauce pan over low heat, cook rice, onion, and garlic in oil until rice is lightly browned, stirring frequently. Stir in hot chicken broth, picante sauce and, if desired, carrot. Cover and simmer until all liquid is absorbed, about 20 minutes. Makes 6 servings of 1/2 cup each.
