Introduction

Great recipe that you can modify to your taste. I've decreased the salt from 1 teaspoon to 1/4 tsp. Vary the nuts and seeds. Sometimes I add 1 Tablespoon of Steen's pure cane syrup. Ingredients

    8 cups thick Rolled oats
    2 cup chopped nuts (pecans and walnuts are nice)
    2 cup raw sunflower seeds
    1 cup sesame seeds
    1 cup unsweetened coconut
    1/2 tsp salt
    1/2 cup maple syrup
    1/2 cup olive oil
    2 cups dried chopped fruit (dates, cherries, raisins, figs)

Directions

Mix oats, nuts, sunflower and sesame seeds, coconut and salt in a large bowl. Warm the maple syrup and oil in small saucepan. Add to dry oat mixture and toss to coat. Spread on 2-3 large baking sheets, about 1/2 inch thick (if too thick, it will not crisp properly). Roast for 30-40 minutes, stirring once or twice and rotating sheets, until golden. Cool, then add chopped dried fruit. Store in jars or plastic bags. Freeze for longer term.
Makes 4 gallons, or 192 one-third cup servings.
