Introduction

We loved ham and split pea soup, but my husbands stomach couldn't handle the actual meat. I use the Ham flavored Better Than Boullion, and you could almost believe this was made with a big ole ham hock. If you wanted to make this truly vegetarian, you could substitute vegetable broth for the water and boullion and use smoked pepper, liquid smoke or smoked paprika to hint at that "hammy" flavor. Ingredients

    1 TBS extra virgin olive oil
    salt
    2 medium onions, chopped medium
    2 medium carrots, chopped medium
    2 medium celery ribs, chopped medium
    1/2 TBS butter
    2 cloves garlic, minced or pressed in garlic press
    pinch sugar
    1 pound split peas, rinsed and picked over
    2 quarts hot water
    2 TBS Ham flavored Better than Boullion
    2 bay leaves
    1 tsp dried thyme
    3 small new potatoes, scrubbed and cut into medium dice

Directions

Heat olive oil in a dutch oven over medium heat. Add onions, carrots, celery and 1/4 tsp salt. Cook covered for 10 minutes, stirring occaisionally. Add butter, garlic and sugar, and cook for 5 more minutes. Add peas, boullion, water, bay leaves, thyme, and potatoes. Bring to a boil, then turn dowb to a simmer. Cook until peas are tender, about 35 minutes. Season with salt and pepper as desired.
