Ingredients

    2 boneless skinless chicken breast halves (or 1 set)
    2 C brown rice, uncooked
    1/2 C chopped fresh cilantro
    1 small onion, coarsely chopped
    1/4 lb. fresh mushrooms, coarsely chopped
    1 (15-oz.) can yellow sweet corn
    1 (15-oz.) can beans in chili sauce
    1/3 C enchilada sauce
    2 1/4 C water

Directions

1. pre-heat oven to 350 degrees F

2. dice chicken, and chop other ingredients.

3. combine all ingredients in a casserole dish

4. bake for an hour, or until rice and chicken are done.
